Manual harvest in the first fifteen days of September. The grapes are hung on nets for 80 days.
The fermentation takes place in steel tanks at controlled temperature. The refinement continues in French oak barrels for 12 to 15 months.
FOOD & WINE MATCHING:
Ideal with structured dishes of red meats, game of feathers and hair and first courses with important sauces. Optimum with seasoned cheeses. It is gorgeous tasted on its own at the end of the meal accompanied by a cigar.
Orgno can mature in the cellar for 10 to 15 years
The Merlot vine was planted in the Orgno vineyards in 1978. Our desire was to verify the potentialities in our territory, traditionally devoted to white wines, of a variety of red grape varieties. The first results we got were excited: Merlot got very good in our area. However, we waited ten years before launching it on the market, so that we could achieve the quality levels we pursued.
If the bottle has a few years of aging, it is advisable to bring it to room temperature half a day before consumption, to close it a few hours before serving and to serve at 18 ° C after decanting the wine.
