Intense red ruby color with light red brick glares. Ripe cherry and dried plums aromas. Soft and velvety, with a light tannin, hints of spices and a textural and intense finish. Ideal pairing with red meat, medium aged cheese and with a classic dish of Veneta tradition: "pasta e fasoi".
After a first fermatation in still thanks, in February the wine ferments again in oak. In the barrels we add the skins of the dried grapes pressed to make the new Amarone.
The ageing in obarrique and tonon, lasts at least 24 months. After bottling the wine is left to rest in bottle for at least 6 months before release.
Corvina, Corvinone, Rondinella
The harvest starts at the end of September and the grapes are picked only by hand. Only the best bunches are selected, a third of which is collected in small crates to be dried (appassimento) for 20 days.
Hillside vineyards, located in an old qarry and the slopes around it, 400m above the sea level and all facing south. The quarry was converted 10 years ago through planting the first vines and nowadays is a green natural terrace overlooking the valley.
